Banana bread


This carbohydrate-rich snack use oats in the recipe. The oats are full of fibre but the quantity is not usually sufficient to cause stomach or intestinal issues. Nevertheless, test this recipe on a training day to be sure. Then you are sure that the banana bread is suitable for a competition day.

  • 3 bananas
  • 40g dates, de-stoned
  • 3 eggs
  • Salt
  • 1 apple
  • 1 tsp baking powder
  • 100g flour
  • 50g oatmeal
  1. Mix the bananas with the dates to create a smooth mixture
  2. Beat the eggs with a pinch of salt
  3. Cut the apple into cubes
  4. Mix the eggs and apple into the banana mixture
  5. Mix the baking powder, flour and oatmeal
  6. Stir through the batter and pour into a non-stick baking tin
  7. Bake for 45 minutes in the oven at 200°C.
